Lemon Curd Mousse Cake

I didn’t make this cake.  As a matter of fact, I was voted off the island when I suggested that a more appropriate name for it might be “Lemon Curds and Crack.”  So, instead, I’m taking over this post to tell you that if you’re going to have a cheat treat, this is well worth it.  Hell, it’s worth a dozen cheats ten times over.

Treasure made this cake in honor of my 29th birthday’s sixth anniversary.  We devoured this cake as though we’d never seen dessert before and then lamented there was no more.  I will say that it doesn’t hurt knowing someone who may have missed her calling as a professional baker and who likes to shower goodies on their friends.  I mean….connections are connections, right?!

We all cheat occasionally.  And I’m going to argue that it’s good for us to do so.  For me, anyway, it helps to alleviate the cravings and constant thoughts of food that isn’t part of my day-to-day diet.  Well….except for this Lemon Curds and Crack cake and these DEVINE cinnamon/apple scones that Treasure also makes.  I pretty much think about those once or ten times a day.

Make this for a special occasion.  I assure you that it’s worth the effort (says the person who’s never tried making it but is an expert at eating it).

Janelle is correct!  This cake is a serious CARB overdose!  So to name it Crack is quite correct.  It’s light and tastes of Spring!  The teachers sure gobbled it up at their Teacher Appreciation Luncheon.  There wasn’t a sliver left!  So if you don’t believe us, just ask one of those lucky folks!  They’ll tell ya!

One word of advice though!  This cake has to be made in three steps, and takes a lot of “chilling” time.  You need to be prepared ahead of time if you want to make this Crack!  No deciding a few hours before your special event to make this one kids!!  But it is worth it I promise, plus it’s quite simple really!  I’m thinking Sweet Nothings needs to put this on their menu if you’re reading Kayleigh!!

This is not my recipe.  And I am not about to fix something that isn’t broken!  And since it’s Mother’s day, go out and make this for your mom!!  She will love it!  Other than the fact that she won’t be able to have it until Monday, but hey, it’s the thought that counts!
